  • 1/4cup organic olive oil
  • 2pounds lbs. grass fed beef
  • 1tablespoon sea salt
  • 2cups chopped organic onion
  • 6cloves organic garlic
  • 2tablespoon organic chili powder
  • 1tablespoon organic paprika
  • 1 1/2tablespoon organic cumin
  • 2cans organic crushed tomato28 oz.
  • 2cans mild green chilies4 oz.
  • 2cans black beans
  • 1cup organic chicken broth
Avocado and Chipotle Sour Cream
  • 1 organic avocado
  • 3/4cup organic sour cream
  • 2teaspoons chipotleuse only the liquid
  1. Heat oil in a large pot over medium heat. Add onion first and then add garlic (after about 2 minutes) and cook, stirring frequently, until onion is translucent, totaling about 5 minutes.
  2. Add grass fed ground beef and cook, stirring and breaking up with a wooden spoon, until meat is browned, 3 to 5 minutes.
  3. Add cans of crushed tomato, beans, green chilies, and broth. Season with salt, chili powder, paprika, cumin and stir to combine. Bring to a boil, lower the heat to low, cover and simmer, stirring often, until flavors have melded and sauce is thickened and bubbly, about 30 minutes.
  4. While the chili is cooking you can prepare the avocado and chipotle sour cream. In a blender mix the avocado and sour cream and add in the chipotle to taste. I recommend 2 tsp. but I would start with less and add more if needed. Everyone’s heat tolerance is different.
  5. Once the chili has finished simmering ladle chili into bowls, top with avocado and chipotle sour cream, organic cheddar cheese, and serve.
