Instructions
- Heat oil in a large pot over medium heat. Add onion first and then add garlic (after about 2 minutes) and cook, stirring frequently, until onion is translucent, totaling about 5 minutes.
- Add grass fed ground beef and cook, stirring and breaking up with a wooden spoon, until meat is browned, 3 to 5 minutes.
- Add cans of crushed tomato, beans, green chilies, and broth. Season with salt, chili powder, paprika, cumin and stir to combine. Bring to a boil, lower the heat to low, cover and simmer, stirring often, until flavors have melded and sauce is thickened and bubbly, about 30 minutes.
- While the chili is cooking you can prepare the avocado and chipotle sour cream. In a blender mix the avocado and sour cream and add in the chipotle to taste. I recommend 2 tsp. but I would start with less and add more if needed. Everyone’s heat tolerance is different.
- Once the chili has finished simmering ladle chili into bowls, top with avocado and chipotle sour cream, organic cheddar cheese, and serve.
