Chili, a simple and all-around feel good recipe using organic ingredients and grass fed ground beef. With the right balance of spices, protein, and tomatoes this recipe is a quick and easy family meal.

Ingredients
  • 1/4 cup organic olive oil
  • 2 pounds lbs. grass fed beef
  • 1 tablespoon sea salt
  • 2 cups chopped organic onion
  • 6 cloves organic garlic
  • 2 tablespoon organic chili powder
  • 1 tablespoon organic paprika
  • 1 1/2 tablespoon organic cumin
  • 2 cans organic crushed tomato 28 oz.
  • 2 cans mild green chilies 4 oz.
  • 2 cans black beans
  • 1 cup organic chicken broth
Avocado and Chipotle Sour Cream
  • 1 organic avocado
  • 3/4 cup organic sour cream
  • 2 teaspoons chipotle use only the liquid

Avocado and Chipotle Sour Cream
  • 1 organic avocado
  • 3/4 cup organic sour cream
  • 2 teaspoons chipotle use only the liquid
Instructions
  1. Heat oil in a large pot over medium heat. Add onion first and then add garlic (after about 2 minutes) and cook, stirring frequently, until onion is translucent, totaling about 5 minutes.
  2. Add grass fed ground beef and cook, stirring and breaking up with a wooden spoon, until meat is browned, 3 to 5 minutes.
  3. Add cans of crushed tomato, beans, green chilies, and broth. Season with salt, chili powder, paprika, cumin and stir to combine. Bring to a boil, lower the heat to low, cover and simmer, stirring often, until flavors have melded and sauce is thickened and bubbly, about 30 minutes.
  4. While the chili is cooking you can prepare the avocado and chipotle sour cream. In a blender mix the avocado and sour cream and add in the chipotle to taste. I recommend 2 tsp. but I would start with less and add more if needed. Everyone’s heat tolerance is different.
  5. Once the chili has finished simmering ladle chili into bowls, top with avocado and chipotle sour cream, organic cheddar cheese, and serve.
